Elderberry has been long reputed to support recovery from cold & flu and well as boosting overall immunity due to its high content of: Vitamin C, phenolic acids & flavonols (Anti-oxidants), and anthocyanins. Anthocyanins are what give our heat treated elderberries that deep blackish purple color while supplying even more anti-oxidants and anti-inflammatory effects.
There are a plethora of DIY options for Elderberries including syrups, gummies, oxymels, jams, pies and more.
Elderberry Syrup:
Simmer 3/4 cup dried elderberries and your desired spices (optional) for 45 minutes. Some common spices added are fresh ginger or a cinnamon stick. Once the water is reduced by half, strain the remaining liquid out using a fine mesh strainer. You want to ensure you’re removing all excess liquid, so pressing down on the berries with the back of a wooden spoon is a good practice. Once cooled, add your raw, local honey. (optional) Store in an air tight, glass container in the refrigerator. Will last up to 2 months.
